Daydream Cocoa Latte

The café in this show serves coffee to most of its customers, so this recipe starts with espresso. The cocoa and honey keep it sweet enough for people who don’t usually drink coffee.

Steps

1. Whisk the cocoa powder, honey and vanilla with a splash of the milk until it becomes a smooth paste.
2. Heat the rest of the milk until it steams (don’t let it boil), then froth it if you can.
3. Pull your espresso into the mug and stir in the cocoa paste.
4. Pour in the hot milk.
5. Top with whipped cream and a pinch of cocoa powder.

Barista’s note

To dust a shape onto the cream, cut it out of a piece of paper and sift the cocoa over it.
