Kissaten are old-style Japanese coffee shops, and melon cream soda is one of their standard menu items. It turns up in a lot of anime café scenes. It has no caffeine.
Steps
- Fill a tall glass with ice.
- Pour in the melon syrup.
- Slowly top with sparkling water, pouring down the side to keep the fizz.
- Float a scoop of vanilla ice cream on top.
- Add the cherry. Serve with a long spoon and a straw.
Barista’s note
If you can’t find melon syrup, blend honeydew with some sugar and strain it. One drop of green food coloring gives it the usual bright green color.
